Before Firefly Kitchens was even a hint of an idea, while I was raising my kids, I found myself on the path to becoming a nutritional therapist. Following my passion for food, cooking and wellness I made a life changing discovery during one of my courses. I stumbled upon a very small chapter highlighting the health benefits and disease prevention capabilities of fermented foods, specifically kraut! Discovering kraut and its medicinal probiotic power led to immediate at-home kraut making, endless recipe creations and 2 years later, the beginning of Firefly Kitchens.
Since then, I have made it my mission to produce fresh ferments packed with crunch, tang and zest, while showing folks all of the delicious ways that they can incorporate these extraordinary foods into their daily meals.

When we say “handcrafted,” we can actually back that up. The term “handcrafted” gets tossed around a lot, but at Heavens to Betsy, we really mean it. Betsy’s frustration with typical, excessively sweet fudge sauces sent her on a two-year, kitchen-disheveling journey to concoct a recipe for the most sophisticated dark chocolate fudge sauces ever poured, licked, dipped into, or scraped from the bottom of a jar. Laboring countless late nights over a stove, Betsy elevated trial-and-error to an art form, tossing enough rejects to fill a good-sized hot tub. Yeah… we’d say “handcrafted” is the right word.
